Tim Sousa, Executive Chef at Tavern on Broadway, took to The Rhode Show to whip up one of his latest delicious creations: Country Fried Game Hen
Chef Tim’s philosophy on food is that he tries to cook everything that’s fresh and around him. He cooks everything from scratch. There’s something to be said about good, classic food done right and well, but Tim has always tried to be creative and innovative with new combinations and inspirations.
Ingredients:
2 ea split game hens
1 qt buttermilk
4 tbsp salt
2 tbsp paprika
1 tbsp fenugreek
1 tsp cayenne
2 bunches rainbow chard chopped
Country gravy
1 # ground sausage
4 oz chicken fat
4 oz flour
1 cup chicken stock
1 qt water
Salt and pepper
Biscuit
2 cups flour
1 tsp sugar
1 tbsp baking powder
8 tbsp butter
3/4 c buttermilk
Maple paprika butter
1 # butter
4 tbsp maple syrup
2 tbsp paprika
2 tbsp salt
